Scottish Stovies


Ingredients: 

1 tablespoon of olive oil. A 340g tin of corned beef, chopped. 500g of white potatoes, peeled and cut into bite size pieces. 2 large onions, chopped small. 3 large carrots, sliced. 400ml of beef stock, made from 2 stock cubes. Freshly ground black pepper. A dash of Worcestershire Sauce.

Instructions:

  1. Heat the olive oil in a large pan and gently sauté the onion until soft. (About 6 minutes.)
  2. Add the carrots, potatoes, freshly ground black pepper and stock and stir everything through. Simmer for about 40 minutes, stirring occasionally.
  3. Add the corned beef and mix through. Cook for about 5 more minutes adding a splash or 2 of Worcestershire sauce if you like. 😊

The potatoes and corned beef will break down a wee bit and thicken the meal.

You can have it in a bowl with chunky bread or the more traditional way is to have it with oatcakes. (We like cheese oatcakes because we’re fatties and cheese makes everything better. 😂) I always add extra black pepper to mine because I love it. Such a warming meal for autumn and winter. 💜

This is just my way of making stovies and it’s certainly not the only way. I know some people use leftover roast beef, roast potatoes, or even sausages for theirs. It’s all about using what you have and making it go further. 🥰 Enjoy!
